Fish and Chips

Fish and chips a very popular food from UK.
Wonder what is it all about ?
Deep fried fish (Cod being most popular) covered in a batter or sometimes bread crumbs which went on to be an important part of the English cuisine.

They are numerous recipes for the batter, depending on an individuals taste. varying from a crisp to a soft crust.
After numerous trial with different recipes, the one which i stuck to was a simple beer batter with Tilapia fish.
The finished product is a crisp crust which is goes perfect with tartar sauce.

Ingredients


  • Flour 
  • Egg (1 for every pound or every 500g of flour)
  • Beer
  • Seasoning
  • Boneless fillets of fish (preferably Tilapia)
Procedure
  • Prepare a beer batter with flour, egg and seasonings
  • Keep the batter thin. Like a thick cream soup.
  • Pat dry the Fish and season it
  • Dip it into the batter and deep fry till golden brown.
  • Serve with crisp French Fries.
  • Serve with tartar sauce.
  • Or mix in some ketchup and mayonnaise together. 
Note
  • Use a deep shallow pan for frying with enough oil. 
  • Try to float the fish into the oil than dropping it straight. You don't want the  fish sticking to the bottom.

A simple turkey for thanks giving

Thanks giving.
Good food and fun with friends and family.
And of course not to forget Turkey

I like all that fun with loved ones except the turkey part.
Its fun cooking that whole turkey in your oven. But the mess starts on the dinner table when carving it.
Thats why I cook it simple. Just the turkey legs.
Gives individual portions and no mess carving it.

Ingredients

  • 4 turkey legs
  • 15g dry tarragon leaves or thyme (the herb is your choice but any one) 
  • 5g garlic
  • seasoning to taste
  • 50ml butter or oil

Procedure
  • marinated the turkey legs with all the ingredients and set aside for atleast an hour before baking
  • bake the turkey at no more than 160C/ 325F. till the internal temperature reaches 65C/150F
  • pull out from the oven and baste it with butter.
